Coconut Chocolate Chip Cookies

A lifetime ago I worked at a local bakery. Managing the restaurant was hands down the best and worst job I’ve ever had. There is something to be said about being the boss … making your own schedule, not answering to anyone and just the general sense of freedom that comes with running the show. However with freedom comes great responsibility and stress. Never in my life will I ever voluntarily manage people again … it’s just not for me. Being on call 24-7 was also a downer. To it’s credit the bakery introduced me to some of the best people on the planet … I’m honored to call several of them bestys to this day.

Any who I digress from the point of this post which is cookies! Bridge City Cafe introduced me to coconut chocolate chip cookies and I’ve been obsessed with them ever since and honey dijon kettle chips … has anyone else noticed those are nearly impossible to find anymore? So sad!

Back to the point again … let’s bake up some delicious little morsels shall we?

  • Preheat oven to 350 degrees.

  • In a mixing bowl combine 2 1/4 cups flour, 1 tsp baking soda, 1 tsp salt

  • In a separate bowl cream together 2 sticks room temperature butter with 3/4 cup brown sugar and 3/4 cup sugar. Mix at a medium speed until lightened in color. Then add in two large eggs and 2 tsps vanilla.

  • Slowly add dry ingredients to butter/sugar mixture.

  • Once combined add in two cups of chocolate chips and 1 cup sweetened shredded coconut.

  • Next using an ice cream scoop … for uniformity … begin scooping out cookies. Roll each cookie in coconut and place on baking sheet.

  • Bake cookies for 13-15 minutes. Until slightly golden brown on the outside.

  • Set on a cooling rack.

  • Once cooled enjoy with a nice glass of milk … or almond milk … or coffee … or whiskey … whatever you like.

    Those sound really good.

    I agree with you on management. I was in restaurant management for years and years. I loved it, but at the same time, I got really tired of babysitting all the time, and all the headaches associated with it. Now, I teach water aerobics and am a swim coach. There are a lot less headaches. 🙂
