Citrus … is there a better flavor in the world? Lemons, limes, blood oranges … they liven everything up. I married a man who is obsessed with citrus everything. Lemon cake, tangy margaritas and of course key lime pie. The first time I made this treasure I was pregnant with Nugget. I basically ate the entire thing myself within a matter of days … then wondered why I got gestational diabetes … oh life she is cruel sometimes.
If you are looking for a super easy but impressive dessert look no further! Sadly the store didn’t have key limes when I decided to whip this up last week … so I had to settle for regular old limes … and I was pleasantly surprised. So if you can’t locate key limes … do not stress … the pie will turn out fantastic either way.
Begin by preheating the oven to 375 degrees.
Pulverize two sleeves of graham crackers in a food processor.
Once sufficiently demolished add in two tablespoons of sugar and one stick of melted butter. Pulse to combine.
Bake the crust for 12 minutes. Until it is set and a beautiful golden brown.
Drop the oven temperature to 325 degrees and let the crust cool completely.
While crust is cooling mix together condensed milk, lime juice, lime zest and eggs.
Once the crust is completely cooled poor in mixture and bake for 15-17 minutes. You want the pie to be basically set … but the middle should jiggle ever so slightly.
Once the pie is completely cooled … whip up some whipped cream. Generously spread the cream over the pie and garnish with lime zest if you’re feeling fancy.
Finally try to contain yourself from devouring the entire pie … It will be challenging.
