Shrimp with feta and tomatoes

Shrimp with feta and tomatoes is a magical. My mom has made it for years … for birthdays, college homecomings, Sunday suppers and regular dinners. It can be served as the ultimate comfort food over angel hair pasta or it can take a lighter approach over spaghetti squash. Honestly it could be eaten alone … spooned directly into your mouth … it’s that good.

  • Begin by sautéing the shrimp in oil for 5-6 minutes. Until cooked.

  • Chop tomatoes and garlic

  • Add tomatoes, garlic, oregano and feta to the pan. Cook for 5 minutes until sauce has formed.

  • Add salt and pepper to taste.

  • Serve over pasta, spaghetti squash, rice or nothing! If you’re tired simply serve it with some crusty bread.

  • Enjoy!

This sounds delicious! I’d have to use a low carb pasta substitute…but it will still be yummy! : )

This sounds delicious! And I just noticed that you used a low carb spaghetti squash instead of noodles! Yummy!
