Lemonliscious scones

Soft, buttery, flakey lemon scones … is there any better way to kick off spring in Portland? This morning the sun was shining and the air was crisp. The Pacific Northwest really shows of her beauty and flexes her muscles during the spring. I decided to embrace the weather and warm up my house by baking some delicious lemonliscious scones.

I love scones because I love biscuits … scones are slightly sweeter biscuits so what could be wrong with that? I also like them because you can sneak in fun flavors like lemon, maple, cinnamon, ginger … or stick with the classic cream dressed with jam and butter. I’ve never met a scone I didn’t like … or butter … or jam for that matter.

Now that we’ve cleared all that up … on to the scones!

  • Begin by adding flour, salt, baking soda and lemon zest into a food processor. Pulse the ingredients together until mixed. *Scones can easily be made without a food processor. If you don’t have one add the ingredients into a large mixing bowl and mix.*

  • Next chop up the butter and toss into the food processor and pulse until combined and looks like this:

  • If you don’t have a food processor cut the butter into the dry ingredients using a pastry cutter. The mixture will still resemble course crumbs or sand.

  • Next whisk together the heavy cream, lemon juice, vanilla and egg. Pour the mixture into the dry ingredients and pulse several times until it it looks like this:

  • If you don’t have a food processor mix together with a wooden spoon until just incorporated.

  • Dump the mixture onto a floured surface and form into a round disk. Cut the disk into 8 equalish size pieces. Remember these are homemade they do not have to be the essence of perfection … unless that’s your thing … and then perfect away.

  • Next toss the scones onto a baking sheet lined with parchment. Bake at 350 for 22-24 minutes.

  • While scones are cooling mix raw sugar with yellow food coloring for garnish and make glaze for scones. *Glaze includes juice from one lemon, 1 cup of powdered sugar, 1-2 tsps water. Mix all glaze ingredients together until at desired consistency. I personally don’t like a thick layer of glaze.*

  • Once the scones have cooled dip them in the glaze to coat and …..

  • Add decorative sprinkles if you want to fancy them up … or just add a pop of yellow so they look more lemony.

  • Finally enjoy!
