Shrimp with feta and tomatoes is a magical. My mom has made it for years … for birthdays, college homecomings, Sunday suppers and regular dinners. It can be served as the ultimate comfort food over angel hair pasta or it can take a lighter approach over spaghetti squash. Honestly it could be eaten alone … spooned directly into your mouth … it’s that good.
Begin by sautéing the shrimp in oil for 5-6 minutes. Until cooked.
Chop tomatoes and garlic
Add tomatoes, garlic, oregano and feta to the pan. Cook for 5 minutes until sauce has formed.
Add salt and pepper to taste.
Serve over pasta, spaghetti squash, rice or nothing! If you’re tired simply serve it with some crusty bread.
