Let me start off by saying that I love potatoes … like LOVE them. In fact if I hadn’t been diagnosed with gestational diabetes I would still be turning my nose up at the prospect of cauliflower mashed potatoes. I couldn’t imagine something as bland as a cauliflower taking potatoes place in my heart … but spuds have some serious competition. We eat cauliflower mashed potatoes in our house several times a week … they are that good! Best of all they don’t leave me feeling stuffed to the brim. I can eat as much as I want and not feel an ounce of guilt.
I challenge you to make this dish for a true potato lover and see if they realize they’re eating cauliflower. Could it be the garlic, butter and cream cheese that make up for the vegetableness of the dish … maybe … but I won’t tell if you wont!
Begin by chopping the cauliflower and boiling it until fork tender.
While the cauliflower is cooking add butter and garlic to a small pan. Cook on very low heat for at least 5 minutes. We want the garlic to really infuse the butter with garlicy goodness.
When the cauliflower is cooked strain it and let dry for several minutes. Then add it to a food processor or blender and blend until smooth.
Next add the chopped cream cheese, garlic butter, heavy cream and pepper. Blend until smooth. Taste test and adjust any seasoning.
Next put your “potatoes” into a baking dish and …….
Top with cheese or bacon … or bacon and cheese … or whatever your heart desires. Bake until the cheese is melted. If you aren’t topping your dish then there’s no need to bake it.
Tell me that doesn’t look like potatoes … they are basically twins!
I served mine with pot roast as seen above. But it’s fantastic as a side to roasted chicken, fish, bbq … basically anything you’d served mashed potatoes with … crazy right?!?
